01 / ABOUT THE PLACE

About this place

In Terado-cho, Muko, the first thing to draw diners to Nishimura is its hot soba, built on a clean, uncluttered bonito dashi with no harsh notes. The popular Tempura Soba Set pairs this clear broth with shrimp and nori seaweed tempura, which add an aromatic richness that keeps the soup compelling to the final spoonful. Beside it sits a gently set tamagodon, its soft egg accented by crisp green onions and seasoned with a mild dashi stock that makes a soothing companion between mouthfuls of noodles.

When an appetite calls for cold noodles, the chilled combinations with rice bowls are just as appealing. In the Soboro Rice Set, the bukkake soba is crisply chilled, with crunchy tempura bits and grated daikon radish accentuating its smooth throat-feel. The bowl of seasoned ground meat is cooked sweet and savory with a kick of ginger, given extra dimension by sweet-simmered shiitake mushrooms and delicate ribbons of shredded egg. Diners can also opt for zaru soba dipped in a sharp tsuyu alongside a tendon where the sauce can be poured to personal taste, providing plenty of variety to match different cravings.

At lunchtime, seats frequently fill immediately after the doors open, and orders can take a little time to arrive, so arriving with time to spare is best. After finishing your meal, you can request sobayu to dilute the dipping broth and savor the mellow, aromatic finish. A free customer parking lot is provided next door, though please note that payment is cash only.
